Changing a shower valve

We're going to have to change the valve in one of the showers. At first, one of the plumbers approved for doing that work in the building told us it would cost something over $300, then the next time we asked, he said $750.
That sounds way too expensive to me. And way too variable in the pricing.
Has anyone else had this done? When was it? Which plumber did you use? What did it cost? Were you satisfied with the work?
